In-shell versus kernel
In-shell peanuts suit roasting and retail sale in their traditional form. Kernels suit oil extraction, confectionery and snack manufacturing where shelling at your own facility would add cost.
Drying and storage
Properly dried peanuts store far better and carry lower spoilage risk. Ask how the lot was dried after lifting and how long it has been in storage.
Size and uniformity
Uniform sizing matters most for retail packing and roasting, where inconsistent kernels cook unevenly. For crushing, uniformity is usually less critical than cleanliness and moisture.
